A delightful dish combining the rich flavors of Italian sausage with fresh bell peppers and onions in a creamy sauce, perfect for family dinners or gatherings.

  • 12 oz penne or rigatoni
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 cup marinara sauce
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 10-12 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Add the sliced bell peppers and onion to the skillet, cooking until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Pour in the marinara sauce and bring to a simmer. Reduce heat to low and stir in the heavy cream, mixing well.
  6. Add the cooked pasta to the skillet, tossing to combine and heat through, about 2-3 minutes.
  7. Stir in the grated Parmesan cheese and season with Italian seasoning, salt, and pepper to taste. Serve hot.

Notes

For extra flavor, use a variety of sausages, like sweet and spicy mixed together. Don’t skip the garlic; it adds a great aroma and depth of flavor.
