A delightful dish combining tender chicken and sweet carrots, flavored with fresh garlic and herbs. Perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large carrots, peeled and cut into sticks
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper in a small bowl to create a marinade.
  3. Marinate the chicken breasts in the marinade for at least 30 minutes.
  4. Mix carrot sticks with honey, balsamic vinegar, and a pinch of salt in a separate bowl.
  5. Place marinated chicken in a baking dish and surround with prepared carrot sticks.
  6. Drizzle leftover marinade over the chicken and carrots.
  7. Bake in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Remove from oven and let chicken rest for 5 minutes.
  9. Slice the chicken and arrange on serving plates, garnishing with fresh parsley.

Notes

For optimal flavor, marinate the chicken longer than 30 minutes. Fresh herbs enhance taste significantly.
