A light and protein-packed quiche without the crust, perfect for breakfast, brunch, or light dinner.

Ingredients

  • 6 large eggs
  • 1 cup whole milk cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup grated cheese (optional)
  • Up to 1 cup choice of vegetables and proteins (bell peppers, spinach, mushrooms, bacon, or ham)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9-inch baking dish with oil.
  3. Blend the eggs, cottage cheese, salt, and pepper until smooth in a blender or food processor.
  4. Stir in the grated cheese and your chosen vegetables or proteins.
  5. Pour the mixture into the prepared baking dish.
  6. Bake for about 45 minutes, or until the center is set and the edges are golden brown.
  7. Allow to cool slightly before slicing and serving.

Notes

For a creamier texture, use farmer’s cheese instead of cottage cheese. Experiment with different cheese types like feta or cheddar for varied flavors.
