Delightful cookies that combine the creamy, vanilla taste of classic crème brûlée with the comforting qualities of a cookie.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon water (for caramelizing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and 1 cup of sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the butter mixture.
  6. Drop dough by rounded tablespoon onto parchment-lined baking sheets, spacing them a few inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Once cookies are cool, sprinkle the remaining sugar on top, and use a kitchen torch to caramelize the sugar until golden and crunchy.
  10. Allow the caramel to cool before serving.

Notes

Store the cookies in an airtight container at room temperature for up to a week. If frozen, caramelize the sugar topping after thawing.
