Delicious muffins featuring sweet, juicy peaches and a warm cinnamon topping, perfect for breakfast, snacks, or dessert.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Beat the egg in another bowl, then add the milk, melted butter, and vanilla extract, stirring until combined.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Fold the diced peaches into the batter without overmixing.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Mix brown sugar and ground cinnamon in a small bowl, then sprinkle the mixture over the tops of the muffins.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool slightly.

Notes

Serve warm or at room temperature. Best enjoyed with butter or a scoop of vanilla ice cream.
