Delightful cookies inspired by traditional Italian cannoli, featuring a soft and chewy texture filled with rich flavors of ricotta, chocolate, and orange.

  • 1 Cup Ricotta Cheese
  • ½ Cup Unsalted Butter, Softened
  • 1 Cup Granulated Sugar
  • 1 Teaspoon Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ½ Cup Chocolate Chips
  • 1 Tablespoon Orange Zest

Instructions

  1. Set your oven to 350°F (175°C).
  2. Combine ricotta cheese, softened butter, and sugar in a large mixing bowl. Beat until smooth and fluffy, about 2-3 minutes.
  3. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Fold in the chocolate chips and orange zest.
  7. Place dough onto a lined baking sheet, spaced about 2 inches apart, and bake for 12-15 minutes.
  8. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve cookies fresh, optionally dusted with powdered sugar. Can be frozen with parchment paper between layers.
