A quick and flavorful zucchini noodles recipe that serves as a low-carb alternative to traditional pasta.

Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Spiralize the zucchini using a spiralizer to create noodles.
  2. Heat the olive oil in a large skillet over medium heat until shimmering.
  3. Sauté the minced garlic for about 1 minute until fragrant.
  4. Cook the spiralized zucchini noodles in the skillet with salt and pepper for 3-5 minutes until just tender.
  5. Serve with freshly grated Parmesan cheese if desired.

Notes

Store leftover zoodles in an airtight container in the fridge for up to 2 days. Reheat lightly or enjoy cold in a salad.
