A light and luxurious dish combining zucchini noodles and sautéed shrimp in a savory lemon-garlic sauce.

Ingredients

  • 2 medium zucchinis
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Spiralize the zucchinis to create noodles and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turns pink, about 2-3 minutes per side.
  4. Pour in the chicken broth and lemon juice, bringing the mixture to a simmer.
  5. Add zucchini noodles to the skillet, tossing gently and cooking for 2-3 minutes until tender but firm.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

Reserve some fresh parsley for garnish. Be careful not to overcook the zucchini noodles.
