A healthier twist on a classic dish, this zucchini lasagna layers fresh zucchini with ricotta, mozzarella, and marinara sauce for a comforting, low-carb meal.

Ingredients

  • 3 medium zucchinis
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. Mix the ricotta cheese, egg, oregano, garlic powder, and a pinch of salt and pepper in a bowl.
  4. Prepare a baking dish by greasing it with olive oil.
  5. Layer zucchini strips, ricotta mixture, marinara sauce, and mozzarella cheese, repeating until all ingredients are used.
  6. Add grated Parmesan on top.
  7. Bake covered for 25 minutes.
  8. Uncover and bake for an additional 15 minutes.
  9. Let cool for 10 minutes before serving.

Notes

If zucchinis are watery, salt them and let sit for 30 minutes before assembling. Customizable by adding vegetables or proteins.
