Delightful zucchini fritters that are crispy on the outside and tender on the inside, perfect for any meal.

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  2. Combine the grated zucchini, flour, eggs, Parmesan cheese, green onions, garlic, salt, and pepper in a mixing bowl and mix until well combined.
  3. Heat oil in a skillet over medium heat, covering the bottom of the skillet.
  4. Drop spoonfuls of the zucchini mixture into the skillet and flatten slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Remove from skillet and let drain on paper towels. Serve warm.

Notes

For a vegan option, substitute the eggs and cheese with suitable alternatives. These fritters can also be baked instead of fried for a lighter version.
