  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Start by washing your zucchinis thoroughly and grating them.
  2. In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract, whisking until just combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently and folding in the walnuts or pecans.
  5. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake in the preheated oven for 60-70 minutes or until a toothpick comes out clean.
  8. Once baked, let it cool in the pan for 10 minutes before transferring it to a wire rack.
