A comforting and flavorful white bean chili that brings warmth and satisfaction on a chilly evening.

  • 2 cans white beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, minced
  • 4 cups vegetable broth
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Chopped cilantro for garnish

Instructions

  1. Sauté the aromatics: In a large pot, sauté onion, garlic, green bell pepper, and jalapeño until soft.
  2. Add the spices: Add cumin and chili powder, stirring for about 1 minute.
  3. Combine everything: Add the drained white beans, vegetable broth, and corn if using.
  4. Bring to a boil: Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
  5. Season to taste: Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped cilantro.

Notes

For a thicker chili, mash some of the beans while simmering. You can swap beans or adjust the spice level to your preference.
