A refreshing summer salad featuring juicy watermelon, tangy feta cheese, and fresh mint, perfect for barbecues or light lunches.

Ingredients

  • 1 large Watermelon, cubed
  • 200g Feta cheese, crumbled
  • 1/4 cup Mint leaves, chopped
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cube the watermelon into bite-sized pieces and place them in a large bowl.
  2. Crumble the feta cheese generously over the watermelon.
  3. Chop the mint leaves and sprinkle them over the feta and watermelon.
  4. Drizzle olive oil and balsamic vinegar over the salad.
  5. Season with salt and pepper to taste.
  6. Toss everything together gently to combine.

Notes

Best enjoyed fresh. Can store leftovers in an airtight container in the refrigerator for up to 2 days.
