A vibrant and fresh summertime treat, these Vietnamese summer rolls are packed with crunchy vegetables, aromatic herbs, and your choice of shrimp or tofu, served with a delicious dipping sauce.

Ingredients

  • Rice paper wraps
  • Shrimp or tofu
  • Rice vermicelli noodles
  • Lettuce leaves
  • Fresh mint leaves
  • Cilantro
  • Carrots, julienned
  • Cucumber, julienned
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Cook the rice vermicelli noodles according to the package instructions. This usually entails boiling them briefly until they’re tender. Once cooked, drain and rinse with cold water to stop the cooking process.
  2. Soak each rice paper wrap in warm water for about 10-15 seconds until they’re soft and pliable.
  3. Assemble the softened wrap on a clean surface. Layer in your lettuce, a handful of rice vermicelli noodles, shrimp (or tofu), mint, cilantro, carrots, and cucumber.
  4. Roll tightly from the bottom to the top, tucking in the ingredients.
  5. Repeat the process with the remaining ingredients until all rolls are made.
  6. Serve the rolls with a bowl of peanut sauce or hoisin sauce for dipping.

Notes

Feel free to customize the fillings to your taste. Keep the rolls fresh for best flavor and texture, and store leftovers in an airtight container for up to 2 days.
