Delightful and refreshing Vietnamese Summer Rolls filled with shrimp, crisp veggies, and fresh herbs wrapped in rice paper.

Ingredients

  • Rice paper wrappers
  • Shrimp (cooked and peeled)
  • Rice vermicelli noodles
  • Lettuce leaves
  • Fresh herbs (mint, cilantro, basil)
  • Carrots (julienned)
  • Cucumber (julienned)
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Cook the rice vermicelli noodles according to package instructions and let cool.
  2. Prepare all the vegetables and herbs by washing and cutting them into thin strips for easy rolling.
  3. Soak a rice paper wrapper in warm water for about 10-15 seconds until it becomes soft and pliable.
  4. Lay the wrapper on a clean surface and place a small amount of noodles, shrimp, lettuce, herbs, carrots, and cucumber in the center.
  5. Fold the sides over the filling, then roll it tightly from the bottom to the top to create a beautiful summer roll.
  6. Repeat with remaining ingredients until all your rolls are beautifully crafted.
  7. Serve with peanut sauce or hoisin sauce for dipping. Enjoy every delicious bite!

Notes

For best results, keep the rice paper wrappers covered with a damp cloth while working. Feel free to customize fillings to your taste!
