A simple and nutritious veggie omelette bursting with flavor, perfect for breakfast, brunch, or dinner.

Ingredients

  • 2 eggs
  • 1/4 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/4 cup spinach, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Whisk together the eggs with a pinch of salt and pepper until smooth.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Sauté the diced onions and bell peppers until tender.
  4. Add the chopped spinach and allow it to wilt.
  5. Pour the whisked eggs over the cooked veggies.
  6. Lift the edges of the omelette to let uncooked eggs flow underneath.
  7. Fold the omelette in half and serve hot.

Notes

For an extra fluffy omelette, add a splash of milk or cream to the egg mixture. Experiment with different vegetables as desired.
