A comforting and vibrant dish of lentils simmered with Mexican spices, perfect for any meal.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Rinse the lentils under cold water.
  2. Sauté the onion and garlic in a skillet until translucent.
  3. Cook the bell pepper and zucchini until tender.
  4. Combine the lentils, diced tomatoes, spices, and seasoning in the skillet.
  5. Pour in 4 cups of water and bring to a boil.
  6. Reduce heat and simmer for 20-30 minutes until lentils are tender.
  7. Garnish with cilantro and serve with lime wedges.

Notes

Experiment with different vegetables or add jalapeños for heat. Great as leftovers!
