A colorful and quick vegetable stir fry packed with flavors and textures, perfect for a cozy dinner.

Ingredients

  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Sesame seeds (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add minced garlic and ginger to the hot oil. Sauté for 1 minute until fragrant.
  3. Pop mixed vegetables into the skillet and stir-fry for about 5-7 minutes.
  4. Pour soy sauce over the sautéed vegetables and mix well.
  5. Season your stir-fry with salt and pepper to taste.
  6. Serve the stir fry hot, garnished with sesame seeds if desired.
