A creamy, tangy, and refreshing no-bake cheesecake made with passion fruit, perfect for any gathering.

  • 1 cup soaked cashews
  • 1 cup vegan cream cheese
  • 1/2 cup passion fruit pulp
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups crushed cookies (for the crust)
  • 1/2 cup coconut oil (melted)

Instructions

  1. Blend the soaked cashews, vegan cream cheese, passion fruit pulp, maple syrup, and vanilla extract until smooth.
  2. Prepare the crust by mixing crushed cookies with melted coconut oil and pressing into a springform pan.
  3. Assemble the cheesecake by pouring the filling over the crust and smoothing the top.
  4. Refrigerate the cheesecake overnight or for at least 4 hours to set.
