Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 cans chickpeas, drained and rinsed
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, ground cumin, and smoked paprika; cook for 1 minute.
  4. Pour in vegetable broth and add chickpeas; increase heat to bring to a boil.
  5. Reduce heat to a simmer and cook for 10 minutes.
  6. Use an immersion blender to blend half of the soup, leaving some chickpeas whole for texture.
  7. Season with salt and pepper.
  8. Ladle soup into bowls and serve hot.

Notes

Serve hot, garnished with fresh herbs. Pairs well with crusty bread or a fresh salad. Store leftovers in an airtight container for up to 4 days.
