Ingredients
Scale
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons unsweetened cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 teaspoons vanilla extract
1 to 2 tablespoons red food coloring
8 ounces cream cheese, softened
1/3 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch pan or two 9-inch round pans, and line with parchment paper if desired.
Beat the softened cream cheese with 1/3 cup granulated sugar until smooth. Add in 1 large egg and 1/2 teaspoon vanilla extract, and mix until just combined. Set aside.
Whisk together 1 1/2 cups vegetable oil, 1 cup buttermilk, 2 large eggs, 2 teaspoons vanilla extract, and red food coloring.
Combine the wet and dry ingredients until the batter is smooth and well incorporated.
Pour the red velvet batter into your prepared pan. Drop spoonfuls of the cheesecake mixture over the top, then swirl them together to create a marble effect.
Bake for 30 to 40 minutes (or 25 to 30 minutes for round pans) until a toothpick comes out clean with a few moist crumbs.
Cool completely in the pan before slicing or frosting.
Notes
Serve with whipped cream, chocolate shavings, or vanilla ice cream for an extra touch.
