A colorful and customizable salad featuring ground turkey, fresh veggies, and crispy tortilla chips.

  • 1 lb ground turkey
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1 packet taco seasoning
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • Tortilla chips for serving

Instructions

  1. Sauté the ground turkey in a large skillet over medium heat until browned. Stir in the taco seasoning and cook according to the package instructions.
  2. Prepare the salad base by combining chopped romaine lettuce, black beans, corn, cherry tomatoes, avocado, and shredded cheese in a large bowl.
  3. Combine the cooked turkey with the salad base and mix well for an even distribution.
  4. Dress it up by drizzling with salsa and sour cream, then toss to combine.
  5. Serve with tortilla chips on the side for added crunch.

Notes

This salad is best enjoyed fresh. Leftovers can be stored in an airtight container in the fridge for up to two days.
