  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked rice
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream and salsa for serving

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Brown the turkey: Add the ground turkey to the skillet. Cook until browned, breaking it apart for even cooking, about 5-7 minutes.
  3. Mix in taco flavor: Stir in the taco seasoning and chicken broth, bringing the mixture to a simmer for about 2-3 minutes.
  4. Combine the goodness: Add the black beans and corn, followed by the cooked rice. Mix until well combined and heated through, about 2-3 minutes.
  5. Serve it up: Spoon the turkey mixture into bowls and top with diced tomatoes, avocado, and shredded cheese. Serve with sour cream and salsa on the side.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop or in the microwave, adding broth if needed.
