A hearty and customizable Turkey Taco Bowl that combines ground turkey, rice or quinoa, vibrant veggies, and fresh toppings.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 cup cooked rice or quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Sauté the turkey: In a skillet, heat olive oil over medium heat. Cook the ground turkey until browned and cooked through. Add taco seasoning and a little water, stirring until everything is well combined.
  2. Build the base: In a bowl, layer the cooked rice or quinoa first.
  3. Add the turkey: Spoon in the seasoned turkey atop the rice.
  4. Layer in the goodness: Add the black beans, corn, and diced tomatoes over the seasoned turkey.
  5. Top it off: Finish with diced avocado, shredded cheese, and chopped cilantro.
