Delicious and hearty stuffed bell peppers filled with ground turkey, rice, and vegetables, perfect for family dinners.

Ingredients

  • 4 bell peppers (any color you prefer)
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the onion and garlic until softened, about 3-5 minutes.
  4. Add the ground turkey and cook until browned, about 6-7 minutes.
  5. Stir in rice, diced tomatoes, Italian seasoning, salt, and pepper into the skillet, mixing well for about 2 minutes.
  6. Spoon the turkey mixture into each bell pepper, packing it tightly.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes until tender.
  9. Uncover the peppers, sprinkle cheese on top, and bake for an additional 5-10 minutes until melted.
  10. Remove from oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven.
