Comforting turkey stuffed peppers filled with savory meat, fresh veggies, and fluffy rice.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 cup corn (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat, and add diced onions and minced garlic, sautéing until soft.
  4. Add the ground turkey and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, and corn into the turkey mixture, seasoning to taste.
  6. Stuff each pepper with the turkey mixture and place upright in a baking dish.
  7. Sprinkle shredded cheese on top of each pepper if desired.
  8. Cover with foil and bake for 30-35 minutes.
  9. Remove the foil and bake for an additional 10 minutes until tops are golden.
  10. Serve warm with optional toppings like sour cream and cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
