A delightful tart featuring caramelised onions, juicy tomatoes, and creamy goat cheese, perfect for sharing around the table.

Ingredients

  • 1 Red onion
  • 1 tbsp Olive oil
  • 2 tbsp Butter (optional; use more olive oil if not using)
  • 1 tsp Balsamic vinegar
  • 150 g Soft goat cheese
  • 1 tsp Thyme leaves
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)
  • 1 kg Ripe tomatoes
  • 1 block Puff pastry
  • 1 Egg (for egg wash)
  • Everything bagel seasoning (optional)
  • Fresh thyme (for garnish)

Instructions

  1. Slice the onions thinly.
  2. Sauté the onions in olive oil and butter until caramelised.
  3. Add balsamic vinegar, salt, and pepper, and cook for a few more minutes.
  4. Prepare the tomatoes by slicing them thickly.
  5. Roll out the puff pastry onto a baking sheet.
  6. Assemble the tart with caramelised onions and artistically arranged tomatoes.
  7. Crumble goat cheese over the top and sprinkle with thyme.
  8. Brush the edges with egg wash.
  9. Bake according to puff pastry instructions until golden.
  10. Garnish with seasoning and thyme, then serve.

Notes

Store leftovers in the fridge for up to 3 days. Tart can be reheated in the oven.
