Decadent brownies infused with rich chocolate and bold espresso, topped with a creamy mascarpone layer – the perfect summer treat.

Ingredients

  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots of espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. Melt together the chopped dark chocolate and unsalted butter in a microwave-safe bowl in 30-second intervals until smooth.
  3. Add in the brown sugar and granulated sugar, mixing until well combined.
  4. Crack the eggs into the mixture one at a time, whisking thoroughly after each addition until shiny.
  5. Sift in the all-purpose flour and a pinch of salt; gently fold until just combined.
  6. Pour the brownie batter into your prepared tin and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Poke holes in the surface and pour the two shots of espresso over the brownies.
  8. Let the brownies cool completely before adding the mascarpone topping.
  9. Whisk together the mascarpone cheese, heavy cream, sugar, remaining salt, vanilla extract, and espresso powder until light and fluffy.
  10. Spread the mascarpone mixture generously over the cooled brownies and dust with cocoa powder.

Notes

Serve chilled or at room temperature, paired with coffee or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to five days.
