  • ¾ teaspoon vanilla extract

  • ½ teaspoon salt
  • ½ cup sugar, for rolling (optional)
  • â…“ cup jam or preserves, flavor of your choice (raspberry recommended)

Instructions

  1. Cream the butter and sugars in a large mixing bowl until light and fluffy, about 2 minutes.
  2. Add the egg yolk and vanilla extract, mixing until well combined.
  3. Whisk together the all-purpose flour, cornstarch, and salt in a separate bowl.
  4. Combine the dry ingredients into the butter mixture, folding gently until a cohesive dough forms.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Shape the dough into balls, rolling them in sugar if desired.
  8. Create indents in each ball using your thumb or a spoon.
  9. Fill each indent with about ½ teaspoon of jam.
  10. Bake for 12-15 minutes or until edges are lightly golden, then cool completely on a wire rack.

Notes

Experiment with different jams or chocolate ganache for variety. Chilling the dough is crucial for the texture.
