  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying
  • 4 slices of bread or sandwich buns
  • 1/2 cup sriracha mayo
  • 1/2 cup pickled veggies (carrots, cucumber, etc.)
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: Start by marinating the chicken thighs in buttermilk for at least an hour, preferably overnight to enhance flavor and juiciness.
  2. Prepare the Coating Mixture: Mix together the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
  3. Heat the Oil: In a frying pan, heat oil over medium heat until hot.
  4. Dredge the Chicken: Take the marinated chicken thighs and dredge them in the flour mixture until fully coated.
  5. Fry the Chicken: Carefully place the chicken in the hot oil. Fry until golden brown and cooked through, about 5-7 minutes on each side.
  6. Toast the Bread: Toast your bread or buns in the same pan to absorb the chicken flavor.
  7. Assemble Your Sandwich: Spread sriracha mayo on the bread, layer with fried chicken and pickled veggies, and top with fresh cilantro.
