A delightful blend of taco flavors stuffed into vibrant bell peppers, creating a satisfying and hearty meal.

  • 4 bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s ready for our delicious stuffed peppers.
  2. Cut the tops off the bell peppers and remove the seeds, creating a cozy little pocket perfect for stuffing.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned. Don’t forget to drain the excess fat.
  4. Stir in the cooked rice, black beans, corn, taco seasoning, salsa, salt, and pepper. Mix well.
  5. Carefully stuff each bell pepper with the flavorful mixture and place them upright in a baking dish.
  6. Top each stuffed pepper generously with shredded cheese.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbling and golden.
  9. Garnish with chopped cilantro just before serving.

Notes

These can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
