Delicious and nutritious sweet potato toasts, perfect for breakfast or a light snack.

Ingredients

  • 2 Sweet potatoes
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Toppings of choice (e.g., avocado, hummus, peanut butter, smoked salmon)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes lengthwise into 1/4 inch thick slices.
  3. Toss the slices with olive oil, salt, and pepper.
  4. Place the sweet potato slices on a baking sheet and roast them for 25-30 minutes, flipping halfway through.
  5. Let the roasted slices cool slightly, then top with your favorite toppings.

Notes
