A vibrant and flavorful bowl that combines flaky salmon, sweet chili sauce, fluffy rice, and fresh vegetables for a nourishing meal.

Ingredients

  • 2 Salmon fillets
  • 1/4 cup Sweet chili sauce
  • 1 cup Rice (white or brown)
  • 1 cup Fresh vegetables (e.g., bell peppers, carrots, broccoli)
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the salmon and season with salt and pepper.
  4. Bake in the preheated oven for about 12-15 minutes or until cooked through.
  5. While the salmon is baking, cook the rice according to package instructions.
  6. Sauté the fresh vegetables in a pan until just tender.
  7. Once the salmon is done, remove it from the oven and brush with sweet chili sauce.
  8. Serve the salmon on a bed of rice, topped with the sautéed vegetables.

Notes

Store any leftovers in an airtight container for up to 2 days. It’s best enjoyed fresh.
