  • 1/2 cup Sweet Chili Sauce
  • 2 tablespoons Soy Sauce
  • 3 cloves Minced Garlic
  • 1 tablespoon Grated Ginger
  • 1 tablespoon Fresh Lime Juice
  • 1 cup Coconut Milk
  • 2 cups Rice (Jasmine or your choice)
  • 1/4 cup Fresh Herbs (Cilantro, Green Onions, or parsley)
  • Optional: Crushed Red Pepper (for extra heat)

Instructions

  1. Prepare the Chicken Marinade: In a large bowl, combine sweet chili sauce, soy sauce, minced garlic, grated ginger, and lime juice. Toss the boneless chicken thighs (or breasts) in the marinade, ensuring each piece is coated. Let this sit for at least 15 minutes.
  2. Cook the Rice: Rinse your rice under cold water until the water runs clear. Cook the rice according to package instructions.
  3. Sauté the Chicken: Heat a large skillet over medium-high heat and add a splash of oil. Once hot, add the marinated chicken. Sauté for about 6-8 minutes on each side until cooked through.
  4. Create the Coconut Lime Drizzle: Lower the heat and pour in the coconut milk. Stir to combine and let it bubble gently for a few minutes.
  5. Assemble the Bowl: Spoon a generous amount of rice into each bowl. Top with the sweet chili chicken and coconut sauce.
  6. Garnish and Serve: Finish with a sprinkle of fresh herbs and optional crushed red pepper.
