A delicious fusion of sweet pineapple and smoky bacon, these bites are the perfect appetizer for any gathering.

  • 1 pineapple, peeled, cored, and cut into bite-sized chunks
  • 1 pound bacon, each slice cut in half
  • 1 cup brown sugar
  • 1/4 cup hot sauce
  • 1/4 cup packed light brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 3/4 teaspoon cayenne pepper
  • 1 tablespoon pineapple juice

Instructions

  1. Preheat your oven to 400°F and place a rack inside a large rimmed baking sheet.
  2. Prepare each slice of bacon by cutting it in half. Wrap one piece around each pineapple chunk and secure with a toothpick.
  3. Whisk together the brown sugar, soy sauce, grated ginger, cayenne pepper, and pineapple juice in a small bowl.
  4. Coat each bacon-wrapped pineapple piece in the light brown sugar, then spoon the glaze over each piece.
  5. Bake for 25 to 30 minutes until the bacon is crispy and the sugar is caramelized.
  6. Cool for 5 minutes before serving warm with toothpicks.

Notes

Use thick-cut bacon for optimal crispiness. You can prepare these bites a day in advance and bake them just before serving.
