A comforting and delightful Sun-Dried Tomato Pasta that embodies contemporary Italian flavors.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup sun-dried tomatoes (packed in oil, chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup fresh basil (chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Sauté the garlic in a large skillet with olive oil over medium heat for about 1 minute until fragrant.
  3. Add the sun-dried tomatoes and cook for an additional 2-3 minutes.
  4. Combine the cooked pasta into the skillet and stir in the fresh basil. Season with salt and pepper.
  5. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

For a vegan version, skip the Parmesan or use a non-dairy alternative. Feel free to add extra vegetables or protein as preferred.
