Delightful stuffed mashed potato nests filled with seasoned ground beef and vegetables, topped with gooey mozzarella cheese.

Ingredients

  • 35 large potatoes (enough to yield about 4 cups of mashed potatoes)
  • 3.5 tbsp butter (melted)
  • Salt, to taste
  • Smoked paprika, to taste
  • Black pepper, to taste
  • Oregano, to taste
  • Fresh dill (chopped, for garnish)
  • 1.1 lbs ground beef
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (diced)
  • 1 large tomato (diced)
  • 2.5 oz tomato paste
  • 3.5 oz mozzarella cheese (shredded)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Potatoes: Begin by peeling the potatoes and cutting them into quarters. Place the chunks in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
  2. Mash the Potatoes: Once the potatoes are cooked, drain them well and return to the pot. Add the melted butter, a generous pinch of salt, smoked paprika, black pepper, and oregano. Mash until smooth and creamy, then set aside to cool slightly.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C) while you prepare the filling.
  4. Sauté the Vegetables: In a skillet over medium heat, add a drizzle of oil and toss in your chopped onion. Sauté until it turns translucent, about 3-4 minutes. Add the minced garlic and diced red bell pepper, and cook for an additional 3 minutes, allowing the flavors to meld.
  5. Cook the Beef: Add the ground beef to the skillet, breaking it up with a wooden spoon. Season with salt and pepper. Once browned, stir in the diced tomato and tomato paste, mixing well. Let it simmer for about 5 minutes until everything is cooked through. Remove from heat and stir in the shredded mozzarella cheese until melted.
  6. Assemble the Nests: Grease a muffin tin with cooking spray or butter. Grab a portion of mashed potatoes and press it into the bottom and up the sides of each muffin cup to form a nest. Fill each nest generously with the beef mixture.
  7. Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, until the tops are golden brown and the nests are heated through.
  8. Garnish and Serve: Once baked, take the nests out of the oven and let them cool for a few minutes. Carefully remove them from the muffin tin and serve garnished with fresh dill and parsley.

Notes

These nests can be prepared ahead of time and frozen before baking for convenience.
