Comforting stuffed bell peppers filled with seasoned ground meat, fluffy rice, and topped with gooey cheese.

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Sauté the chopped onion and minced garlic until soft and fragrant.
  4. Add the ground meat to the skillet and cook until browned and fully cooked.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper until well combined.
  6. Stuff each bell pepper with the meat mixture generously.
  7. Place the stuffed peppers in a baking dish and top with shredded cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is bubbly.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
