Delightful sushi rolls combining creamy cheesecake with fresh strawberries, all wrapped in a crunchy Oreo crust.

Ingredients

Scale
  • 2 cups crushed Golden Oreos (For the base crust)
  • 4 tbsp melted butter (To bind the crust)
  • 8 oz cream cheese, softened (Make sure it is at room temperature)
  • 1/2 cup powdered sugar (For sweetness)
  • 1 tsp vanilla extract (For flavor)
  • 1 cup heavy whipping cream (To give the cheesecake a light texture)
  • 1/2 cup diced fresh strawberries (For the filling)
  • 1/2 cup strawberry preserves or jam (To add more strawberry flavor)
  • Extra crushed Golden Oreos for coating (For the crunchy outer layer)
  • To taste whipped cream and additional strawberries for garnish (Optional, for serving)

Instructions

  1. Start by gathering all your ingredients. Prepping your workspace keeps everything organized and makes the process smoother.
  2. In a large bowl, mix the crushed Golden Oreos and melted butter together to form a delicious crust. Press this mixture firmly into a rectangular shape on your rolling mat or parchment paper.
  3. Beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing well until combined and creamy.
  4. Whip the heavy cream until stiff peaks form. Gently fold this into the cream cheese mixture, being careful not to deflate the whipped cream.
  5. Fold in the diced fresh strawberries and strawberry preserves gently into the cheesecake mixture.
  6. Spread the cheesecake mixture evenly over the Oreo crust, leaving a small border. Carefully start rolling the mixture tightly.
  7. Coat the outside of the rolls with additional crushed Golden Oreos, pressing them lightly to adhere.
  8. Chill the rolls in the refrigerator for at least 30 minutes to set. Slice into bite-sized pieces and garnish with whipped cream and extra strawberries if desired.

Notes

Ensure your cream cheese is at room temperature for easier mixing. Be gentle when folding the whipped cream to keep your cheesecake airy.
