A whimsical dessert that combines cheesecake with strawberry shortcake, all rolled sushi-style for a fun presentation.

Ingredients

Scale
  • 2 cups crushed Golden Oreos (For the base crust.)
  • 4 tbsp melted butter (To bind the crust.)
  • 8 oz cream cheese, softened (Make sure it is at room temperature.)
  • 1/2 cup powdered sugar (For sweetness.)
  • 1 tsp vanilla extract (For flavor.)
  • 1 cup heavy whipping cream (To give the cheesecake a light texture.)
  • 1/2 cup diced fresh strawberries (For the filling.)
  • 1/2 cup strawberry preserves or jam (To add more strawberry flavor.)
  • Extra crushed Golden Oreos for coating (For the crunchy outer layer.)
  • To taste whipped cream and additional strawberries for garnish (Optional, for serving.)

Instructions

  1. Prepare the Base Crust: In a mixing bowl, combine the crushed Golden Oreos with melted butter until it resembles wet sand. Press this mixture firmly into the base of a rectangular dish or onto a lined baking sheet to form an even crust. Place it in the refrigerator to set while you prepare the filling.
  2. Create the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well blended. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, creating a light and fluffy texture.
  3. Add Strawberries and Jam: Fold in the diced fresh strawberries and strawberry preserves into your cheesecake mixture. This will infuse that delicious berry flavor, making every bite truly special.
  4. Assemble the Rolls: Spread a layer of the cheesecake mixture evenly over the chilled Oreo crust. Using a sharp knife, carefully slice the cheesecake into rectangles. Roll each rectangle tightly, sushi-style, and then coat the outside with more crushed Golden Oreos for that satisfying crunch.
  5. Finish and Serve: Place your beautiful sushi rolls on a serving platter. If desired, add whipped cream and fresh strawberries on top as a garnish. Take a moment to admire your work; then, slice into bite-sized pieces for serving!

Notes

For optimal texture, use room temperature cream cheese. Variations can include different berries or adding melted chocolate on top.
