Deliciously soft muffins filled with fresh strawberries and a creamy center, perfect for breakfast or dessert.

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced strawberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. Cream the butter and sugar until light and fluffy. Add in the eggs and vanilla, mixing well until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the diced strawberries.
  5. In a separate bowl, mix the cream cheese and powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese, then top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store any leftover muffins in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 2 months.
