An easy homemade version of the beloved Starbucks Spinach Feta Wrap, filled with fluffy eggs, fresh spinach, and creamy feta, all wrapped in a whole wheat tortilla.

Ingredients

  • 2 large eggs
  • 1/4 cup feta cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1 whole wheat tortilla
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Whisking the eggs in a bowl with salt and pepper.
  2. Heat a non-stick skillet and add olive oil or cooking spray.
  3. Pour the egg mixture into the skillet and scramble until fully cooked.
  4. Add chopped spinach and feta, cooking briefly until spinach wilts.
  5. Remove from heat and place the mixture in the center of the tortilla.
  6. Carefully fold the sides of the tortilla over the filling and roll it up tightly.
  7. Return the wrap to the skillet for a minute on each side for crispiness (optional).
  8. Serve warm, sliced in half if desired.

Notes

Pair with fresh fruit or Greek yogurt for a complete meal. Store leftovers tightly wrapped in the fridge for up to 2 days.
