Delicious, fluffy egg bites packed with protein and customizable vegetables, perfect for a quick breakfast.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, Swiss, or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, mushrooms, etc.)
  • Salt and pepper to taste
  • Optional: cooked bacon or ham pieces

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Whisk together the eggs, cottage cheese, salt, and pepper until well combined and frothy.
  3. Stir in the shredded cheese and diced vegetables. Optionally, add cooked bacon or ham.
  4. Grease a muffin tin or use silicone molds for easy release.
  5. Pour the egg mixture into the molds, filling about three-quarters full.
  6. Bake for 25-30 minutes until set and slightly golden.
  7. Cool for a few minutes before removing from the molds and serve warm.

Notes

Experiment with different vegetables and cheeses for personalization. Silicone molds help with easy removal.
