Delicious meatballs stuffed with gooey mozzarella, packed with protein from chicken or turkey and nutrients from spinach.

Ingredients

  • 1 lb ground chicken or turkey
  • 1 cup chopped spinach (fresh or thawed)
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, minced
  • 1/2 tsp Italian seasoning
  • 4 oz mozzarella, cubed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the ground chicken or turkey, chopped spinach, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper in a large mixing bowl.
  3. Form meatballs by scooping a portion of the mixture, flattening it, placing a cube of mozzarella in the center, and rolling it into a ball.
  4. Bake the meatballs on the prepared baking sheet for about 18-20 minutes, or until cooked through and golden brown.
  5. Serve hot with marinara sauce over pasta or enjoy as a savory appetizer.

Notes

For best results, seal the mozzarella well in the meatball. These meatballs can be stored in the fridge for up to 3 days or frozen for up to 2-3 months.
