A comforting meal featuring juicy chicken breasts stuffed with a creamy, cheesy filling of spinach and artichokes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together spinach, artichokes, cream cheese, Parmesan, mozzarella, and garlic in a bowl. Season with salt and pepper.
  3. Cut a pocket into each chicken breast and generously stuff with the spinach-artichoke mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts, about 4-5 minutes per side.
  5. Transfer the seared chicken to a baking dish and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C).
  6. Serve hot, letting the creamy filling peek through.
