A bold and flavorful dish featuring shrimp seasoned with zesty Cajun spices, served with scrambled eggs and avocado.

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 eggs (for serving)
  • 1 avocado (for serving)
  • Toast (for serving)

Instructions

  1. In a large bowl, combine the shrimp with olive oil, Cajun seasoning, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss everything until the shrimp is fully coated in the delightful spice mixture.
  2. Heat a skillet over medium-high heat and add the shrimp to the hot skillet. Cook for 2-3 minutes on each side until they are pink and opaque. Keep an eye on them to avoid overcooking!
  3. In another pan, scramble the eggs to your liking. Some people enjoy them soft and creamy, while others prefer a firmer texture.
  4. Serve the spicy shrimp alongside the scrambled eggs, sliced avocado, and golden toast. Sprinkle a little extra Cajun seasoning over the top for a fabulous presentation.

Notes

Adjust the spice level to preference; fresh shrimp is preferred but thawed frozen shrimp works too.
