Spicy Rigatoni Vodka Pasta

A creamy and spicy pasta dish that combines rigatoni with a rich vodka sauce, perfect for cozy family dinners.

Ingredients

  • 1 lb rigatoni pasta
  • 2 tbsp olive oil
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/3 cup vodka
  • 3/4 cup heavy cream
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmigiano Reggiano
  • Salt and black pepper, to taste
  • 1/2 cup reserved pasta water

Instructions

  1. Boil the rigatoni in a pot of salted water until just under al dente (8-10 minutes). Reserve 1/2 cup of the pasta water before draining.
  2. Heat the olive oil in a large skillet over medium heat and cook the chopped onions until translucent, about 3 minutes.
  3. Add the minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
  4. Mix in the tomato paste and let cook for 2-3 minutes until it darkens slightly.
  5. Add the vodka to the skillet and simmer for 1 minute to cook off the alcohol.
  6. Pour in the heavy cream and season with salt and pepper, simmering for another 3 minutes until thickened.
  7. Add the cooked rigatoni and a splash of reserved pasta water, tossing to coat.
  8. Stir in the grated Parmigiano Reggiano until melted and incorporated.
  9. Serve hot, garnished with extra cheese and parsley.

Notes

Taste the sauce while cooking to adjust seasoning. For a milder pasta, reduce or omit the red pepper flakes.
