A comforting and flavorful dish combining spicy Cajun sausage and tender chicken in a creamy sauce over al dente linguine, perfect for busy weeknights.

  • 1 lb spicy Cajun sausage
  • 1 lb chicken breast
  • 12 oz linguine pasta
  • 1 medium onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by slicing the Cajun sausage and dicing the chicken breast into bite-sized pieces. Chop your onion and slice the bell pepper into strips. Finally, mince your garlic cloves.
  2. Sauté sausage and chicken in a large skillet with a splash of olive oil over medium heat until browned, about 5-7 minutes.
  3. Cook the vegetables by adding chopped onion, sliced bell pepper, and minced garlic, cooking for 3-4 minutes until softened.
  4. Stir in Cajun seasoning, then pour in the chicken broth and heavy cream, bringing to a gentle simmer for 5-10 minutes.
  5. Cook the linguine in salted boiling water until al dente, then drain, saving a bit of pasta water.
  6. Toss the cooked linguine with the sauce, ensuring every strand is coated and adjusting seasoning with salt and pepper.
  7. Serve warm, garnished with fresh parsley and Parmesan cheese.

Notes

Store leftovers in an airtight container for up to 3 days. This dish also freezes well for up to 2 months.
