A vibrant and customizable wrap filled with spiced chicken, fresh veggies, and a variety of toppings.

Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper (to taste)
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup black beans (drained and rinsed)
  • 1 ripe avocado (sliced or mashed)
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • Optional: shredded cheese, cilantro, lime wedges
  • Optional sauce: ranch, chipotle mayo, or salsa

Instructions

  1. Sauté the chicken with spices: In a skillet over medium heat, warm the olive oil. Add the cooked chicken, chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring frequently until everything is evenly coated and heated through.
  2. Prepare your fillings: While the chicken cooks, chop your vegetables—lettuce, tomatoes, red onion, and if you prefer, shred cheese. You can also prepare your sauce at this point.
  3. Assemble the wraps: Lay a tortilla flat on a clean surface. Start layering your ingredients: first, a generous scoop of spicy chicken, followed by lettuce, corn, black beans, avocado, tomatoes, and the diced red onion. If using cheese, sprinkle it on top.
  4. Roll and secure the wrap: Fold the sides of the tortilla inward and then roll it from the bottom up, tucking in the fillings as you go. Wrap tightly to keep everything secure.
  5. Optional – Toast the wrap: If you enjoy a crispy exterior, place the assembled wraps back in the skillet (no oil needed) on medium heat for 1-2 minutes on each side until golden and crispy.
  6. Serve with a smile: Slice the wraps in half to reveal the colorful layers within, and enjoy them warm with lime wedges and extra sauce on the side for dipping.

Notes

Use rotisserie chicken for faster prep. Feel free to mix in other veggies or create a vegetarian version.
