A vibrant Southwest Chicken Wrap that combines tender chicken, zesty lime, smoky chipotle, and crunchy veggies for a delicious, handheld feast.

Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese

Instructions

  1. Marinate the chicken by dicing it into bite-sized pieces and tossing it in a bowl with lime juice, chipotle pepper in adobo, olive oil, and chili powder. Allow to marinate for at least 15 minutes.
  2. Cook the rice according to the package instructions during the marinating process.
  3. Sauté the marinated chicken in a skillet over medium heat until cooked through, about 12-15 minutes.
  4. Sauté the sliced red bell pepper and corn in the same pan for about 8 minutes, adding minced garlic in the final minute.
  5. Assemble the wraps by layering rice, sautéed chicken, veggies, black beans, and cotija cheese on each tortilla. Drizzle with chipotle crema.
  6. Wrap the tortillas tightly around the fillings, slice in half if desired, and serve warm!
